Tart and Healthy Coleslaw

Traditional coleslaw is made with mayonnaise, and is high in unhealthy saturated fat. We use the same nutrient-dense, crunchy vegetables with a tart/slightly sweet vinegar-based dressing to vastly improve the health quality of a family favorite.
- 3 cups thinly sliced green cabbage
- 1 cup thinly sliced purple cabbage
- 1 cup shredded carrots
- 1 green bell pepper, finely chopped
- 1 onion, sliced thinly
- 1/2 cup apple cider or red wine vinegar
- 1 tablespoon olive oil
- 2 Tablespoons honey
- ¼ teaspoon dry mustard
- ¼ teaspoon ground celery seed
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- In a large bowl toss together the cabbage, carrots, bell pepper and onion.
- Combine vinegar, olive oil, honey, dry mustard, celery seed, salt and pepper in a small bowl. Whisk with a fork until thoroughly mixed.
- Pour dressing over cabbage mixture and toss to coat. Let mixture sit for at least 10 minutes in the refrigerator to blend flavors before serving.
