Tart and Healthy Coleslaw

Traditional coleslaw is made with mayonnaise, and is high in unhealthy saturated fat. We use the same nutrient-dense, crunchy vegetables with a tart/slightly sweet vinegar-based dressing to vastly improve the health quality of a family favorite.

Ingredients

  • 3 cups thinly sliced green cabbage
  • 1 cup thinly sliced purple cabbage
  • 1 cup shredded carrots
  • 1 green bell pepper, finely chopped
  • 1 onion, sliced thinly
  • 1/2 cup apple cider or red wine vinegar
  • 1 tablespoon olive oil
  • 2 Tablespoons honey
  • ¼ teaspoon dry mustard
  • ¼ teaspoon ground celery seed
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Directions

  1. In a large bowl toss together the cabbage, carrots, bell pepper and onion.
  2. Combine vinegar, olive oil, honey, dry mustard, celery seed, salt and pepper in a small bowl. Whisk with a fork until thoroughly mixed.
  3. Pour dressing over cabbage mixture and toss to coat. Let mixture sit for at least 10 minutes in the refrigerator to blend flavors before serving.
