Mediterranean Salad with Watermelon

Watermelon is an excellent source of lycopene, an antioxidant that helps protect against cardiovascular disease and some types of cancer. Olive oil helps improve lycopene absorption, making this salad not only delicious, but healthy as well.

Ingredients

  • 1 cup arugula
  • 1 cup baby spinach
  • 2 cups cubed watermelon (seedless or remove seeds)
  • ½ cup sliced red onions
  • ½ cup thinly sliced cucumbers
  • 10 black olives
  • 2 oz crumbled goat cheese
  • 1 tablespoon olive oil
  • black pepper to taste

Directions

  1. Mix all ingredients together and toss to combine.
