Healthy Thanksgiving Stuffing

A healthy twist on a Thanksgiving classic

Ingredients

  • 10 slices whole grain bread cut into cubes and left overnight to dry out
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/2 cup diced mushrooms
  • 1 ¼ teaspoon ground sage
  • 1 teaspoon thyme
  • ¾ teaspoon marjoram
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried rosemary
  • ¼ cup fresh parsley
  • 2- 2 1/2 cups low-sodium chicken broth

Directions

  1. Preheat oven to 350 degrees
  2. Saute carrots, celery, onion, and mushrooms in a skillet with one tablespoon olive oil until softened and tender.
  3. Mix together dried bread cubes, sage, thyme, marjoram, black pepper, rosemary and parsley in a large bowl. Add vegetables and chicken broth and mix until moist.
  4. Spray casserole dish with cooking spray. Add stuffing mix and cover with foil. Bake 20-25 minutes; uncover and bake 5-10 minutes or until slightly brown on top.
