Flaxseed Muffins

A delicious, hearty, healthy muffin. To serve, cut each muffin in half, toast, and spread with peanut butter for a balanced snack or breakfast.

Ingredients

  • 1 cup all-purpose flour
  • ½ cup whole-wheat flour
  • ½ tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup quick oats
  • 1/2 cup ground flaxseed
  • 1 cup low-fat buttermilk
  • 1 large egg
  • 1 banana, mashed
  • 2 tbsp honey
  • 1 tsp vanilla
  • 1 cup blueberries

Directions

  1. Mix flour through ground flaxseed in a large bowl.
  2. Combine buttermilk through vanilla in a separate bowl. Stir thoroughly.
  3. Stir liquid ingredients into the dry ingredients. Fold in blueberries.
  4. Fill muffin tins, lined with paper or foil cups, to about 2/3 full.
  5. Bake at 375°F for 15-20 minutes.
